My Mom’s Banana Bread

Makes one loaf

 

Ingredients

¾ cup chopped walnuts or other nuts

1 ¼ cup flour

1 teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon salt

1 cup sugar

2 eggs

½ cup canola oil or other oil 

3 medium overripe bananas, mashed

1 teaspoon vanilla

 

Directions

  • Preheat oven 350’.
  • Coat a 9 by 5 inch loaf pan with cooking spray.
  • Spread walnuts in a pan and toast in the oven for 5-8 minutes.
  • In a medium bowl mix flour, baking soda, cinnamon and salt. 
  •  In another bowl, combine sugar, eggs and oil.  Beat at high until light colored and creamy.
  • Add mashed bananas and vanilla, beat until smooth. 
  • Stir in dry ingredients and chopped nuts. 
  • Pour batter into pan and bake 50-60 minutes until top is springy to touch.
