NC Chocolate Chip Cookies

(from Kristin Cooper, First Lady of NC)

Makes: 2-3 dozen cookies

Ingredients

            2¼ cups flour

            1 teaspoon baking soda

            1 teaspoon salt

            1 stick butter

            ½ cup shortening

            ¾ cup granulated (white) sugar

            ¾ cup brown sugar

            1 teaspoon vanilla extract

            2 large eggs

            1 cup semi-sweet chocolate chips

            2 cups pecan pieces

Directions

  •          Preheat oven to 375’.
  •          Combine flour, baking soda and salt in a small bowl and set aside.
  •          Beat butter, shortening, white sugar, brown sugar and vanilla in a large bowl until creamy.
  •          Beat in eggs, one at a time.
  •          Gradually stir in flour mixture.
  •          Stir in chocolate chips and nuts.
  •          Drop by rounded tablespoons onto ungreased baking sheets.
  •          Bake for 9 – 11 minutes until light golden brown. Don’t overbake if you want them to stay soft and chewy.
  •          Remove to wire racks to cool.
