Orange-Pineapple Delight Salad

AKA: Frog Egg Salad

Servings: 12

Medium

 

Ingredients

            8 oz Acini di pepe (pasta) or 1 cup Quinoa

            1¾ cup pineapple juice

            2 tablespoon corn starch

            2 eggs

            1 cup sugar

            1- 20oz can chunk pineapple (drained)

            1- 20oz can crushed pineapple (drained)

            1- 11oz can mandarin oranges (drained)

            2 – 8oz cool whip or 1- 12oz. cool whip

 

Directions

  •          Cook pasta or quinoa as directed on box. Drain and set aside.
  •          In medium sauce pan, combine pineapple juice, corn starch, eggs and sugar.
  •          Cook on medium heat and whip with whisk until thick.
  •          Mix with pasta or quinoa and put in the freezer.
  •          In large mixing bowl, add chunk pineapple, crushed pineapple, mandarin oranges and cool whip.
  •          Add frozen pasta mixture. Stir to combine.
