Spicy Kale with Tomatoes

Easy

 

Ingredients

2 bunches of Kale (1-2 lbs)

1 purple onion, chopped

3 tablespoon olive oil

4 cloves garlic

1 teaspoon salt

1 – 28oz. can tomatoes, coarsely chopped

12 oz. chicken broth

1 cup water

1 teaspoon red wine vinegar

1 tablespoon hot sauce

 

Directions

  •        Tear kale into bite sized pieces.
  •        Sauté onion and garlic in oil for about 3 minutes.
  •        Add kale and salt until kale wilts.
  •        Add tomatoes and rest of the ingredients.
  •        Bring to boil then cook for 40 minutes, uncovered until the kale is tender.
